This is the perfect salad for a busy work-week when you are limited on time. I've added tuna to this recipe, but you could use any protein of your choice.
Ingredients Serves 2-4 1 can chickpeas, (398 ml) rinsed and dry 2 green onion, minced (or 1/2 red onion) 1 cucumber, cubed 1/3 cup artichokes, canned or in oil 1 can wild tuna 2 cups pre-chopped, bagged rainbow cabbage mix 1/3 cup feta, crumbled 1/4 cup greek salad dressing (I used Maison Orphee brand)
Directions
1. Rinse the chickpeas and pat dry then place into a medium sized mixing bowl. 2. Add in the onion, cucumber, artichokes, feta, cabbage mix and tuna. 3. Pour the dressing over the salad and mix well to combine. *Store in a glass Tupperware container for up to 5 days.
