This is a recipe I have included in my program, The 30-Day Wellness Journey for all clients and now, i’d like to share it with you all as well! They are low carb, high protein and guess what? You can eat the ENTIRE batch…guilt free!
Serves 1-2
Ingredients
2 large eggs
1/4 cup cottage cheese
1/4 cup gluten free oats
1/4 cup vanilla protein powder
1/2 cup unsweetened soy milk
Directions
Place all ingredients into a high powered blender and blend until smooth.
Heat a skillet on medium-high. The skillet must be hot before you pour mixture onto it.
Form your pancake, keep the heat low and cover with a lid. Cook each side for 2 minutes before flipping.
*Note- These pancakes must be covered with a lid while cooking and the pan must be heated for at least 5 minutes prior to pouring the batter, otherwise it will be goopy.
