Oatmeal Coconut Banana Bread Muffins

If you are looking for a healthy, on-the-go snack or quick breakfast idea, you must make these muffins! They are high in fiber and protein and taste so yummy.

 

INGREDIENTS

2 ripe bananas, mashed
2 eggs
1/2 cup unsweetened soy milk
1/4 cup honey or maple syrup
1 tablespoon ground flax
1/2 cup organic white pastry flour
1.5 cup gluten-free rolled oats
1/4 cup vanilla protein powder (I used Sunwarrior)
1/3 cup unsweetened, organic shredded coconut
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup chocolate chips
Sea salt for topping

DIRECTIONS

Preheat the oven to 375 degrees F

In a medium-sized mixing bowl, add the bananas, eggs, soy milk, honey and ground flax. Using an electric mixer, mix until smooth then set aside.

In a another bowl, add the flour, shredded coconut, oats, protein powder, baking soda and baking powder. Mix until combined then pour the wet ingredients into the dry. Stir until smooth then fold the chocolate chips in last.

Grease a muffin pan with butter or coconut oil. Pour some batter into each cup then sprinkle a tiny pinch of sea salt over each muffin before baking.

Place into the oven and bake for 15-18 minutes. Check after 15 minutes using a toothpick insert.

Allow them to cool fully before removing them from the muffin pan.
