If you are looking for something quick and healthy for breakfast (or snacks), you must give these egg bites a try. They make a great addition to any weekly meal prep and the ingredients are all real, whole and simple!
Starbucks Copycat Egg Bites
Ingredients
1/2 onion, finely diced
1 small zucchini, diced
1/2 red pepper, finely diced
Cooking spray
7-8 eggs (or 3 cups liquid egg whites)
1/4 cup milk of choice (I used soy)
2 teaspoon Herbs de Provence (or any other herb seasoning of your choice)
salt to taste
1/2 cup shredded mozzarella cheese
Directions
Preheat your oven to 375°F (190°C).
Using cooking spray, grease a muffin pan or use muffin liners, spraying them as well to prevent sticking.
Chop the onion, pepper and zucchini and set aside.
In a mixing bowl, whisk together the eggs, salt and Herbs de Provence until well combined.
Divide the sautéed vegetables evenly among the muffin cups.
Pour the egg mixture over the vegetables, filling each cup about 3/4 full.
Sprinkle shredded mozzarella cheese on top of each egg bite.
Bake in the oven for 18-20 minutes, or until the egg bites are set and slightly golden on top.
Remove from the oven and let them cool for a few minutes before removing them from the muffin tin.
*You can add in any vegetable you like.
*You can use 3 whole eggs + 2 cups liquid egg whites
