Raspberry Chocolate Chips Muffins
Makes 12
2 cup gluten-free oat flour
1/2 cup almond flour
1 teaspoon cinnamon
2 tablespoon flax/psyllium husk blend
2 teaspoon baking powder
1/2 teaspoon baking soda
2 large eggs
1/3 cup pure maple syrup
2 tablespoon honey
1/3 cup plain greek yogurt
2 teaspoon vanilla extract
1/2 cup organic soy milk
1 cup fresh raspberries
1/3 cup chocolate chips
Directions
Preheat the oven to 375 degrees F.
In a medium-sized mixing bowl, combine the dry ingredients with the wet. Set aside.
In another mixing bowl, add all of the wet ingredients. *Do not add the raspberries and chocolate chips yet.
Pour the wet ingredients into the dry and stir well.
Fold the raspberries and chocolate chips in carefully.
Placed liners into a muffin pan and spray with a touch of oil.
Scoop some of the mixture into each muffin liner.
Place the muffins into the oven to bake for 18-20 minutes, and test using a toothpick insert.
