Parsley, Arugula Quinoa Salad

This salad is so delicious and refreshing. Packed with fiber and protein, a great recipe to add into your weekly meal prep. Be sure to share this recipe!


2 Cups cooked quinoa

1/2 Cup chopped red onion

2 Cup chopped parsley

3 Cups chopped arugula

1/4 cup goat cheese, crumbled

1/4 cup pistachio

1/4 cup organic dried cranberries


Juice from 3 lemons

1/4 cup Maison Orphee Greek Vinaigrette

1 tablespoon dried oregano

Salt & Pepper to taste


Cook the quinoa according to the package then set aside to cool.

Meanwhile, have all of the other ingredients chopped and prepared.

In a large mixing bowl, add the cooled quinoa, chopped onion, parsley, arugula, goat cheese and cranberries. Stir to combine.

Prepare your dressing in a separate bowl then pour over the salad. Stir well to combine.

Serve and enjoy!
